Vegetable Fried Rice : Easy to cook delicious to eat


If there is some leftover rice in the kitchen and less time to cook, this is my choice "Vegetable Fried Rice" very easy to make and delicious to eat. It is not that you can make this dish only with the leftover rice, can make fresh as well. So here is my version of Vegetable fried rice :

Ingredients:
  • Rice : 1 cup
  • Green Onions : One bunch (finely chopped )
  • Carrot : 1 (cut into small cubes)
  • Capsicum : 1 small (cut into small cubes)
  • Green Peas : 1/2 cup
  • Oil : 2 tbsp
  • Soya Sauce : 1 tbsp
  • Salt as per taste
  • Ajinomoto : 1/4 tsp
  • Vinegar : 2 tbsp
  • Tomato Sauce : 2 tbsp

Method :
  • If not using leftover rice, cook 1 cup of rice in 2 cups of water. When cooked allow it to cool.
  • Heat oil in a vessel or kadai.
  • Fry the onions slightly.
  • Add carrot,peas and capsicum and continue frying.
  • Add boiled rice along with aji-no-moto, salt, soya sauce, vinegar and tomato sauce.
  • Cook for 2-3 minutes on high flame while continuously stirring it.
  • Transfer the contents to a serving bowl.
  • Garnish with Green onion ( green portion )
  • Serve hot.
